The throw was excellent, the defense against the knife with an upward block, dumb. Too easy to get cut if the attacker suddenly pulls the knife down. This is the type of knife block we learned in the bs combat judo we learned in the marine corps back in the 70's.
Works in the drill of course because your uke will go with the throw, would be very difficult in real life. I cant imagine a seio nage working unless you drop in a real fight. People dont usually stab like that either, something from a waisst height stabbing position would be good, capturing the wrist as soon as possible and trying to control the momentum into a trip throw.
Edit: also poor white belt, you need to teach him to break fall better.

I have an anti-knife attack defence technique where I step forward to catch the blade with my stomach.
