Why would you ever, and I mean EVER, risk your life for someone else's property, especially if it's insured anyway?
If you're a bank clerk, you cooperate with robbers since it ain't your money they are stealing- this doesn't seem much different in my eyes.
If your job description doesn't involve security/protection, don't ever put your life in danger for a thing, especially if it ain't yours.
That said, risking your life for your own property is another matter, and depends on the balance of power.

I’d say that was a good move on the clerks part. The guy’s not stealing from him and doesn’t seem to want to hurt him. Since the guy had a distance tool, he stayed close enough to the perp to have a chance to fight back if things went south.

Sometimes, the display phones have their own sim card and account, and that account has unlimited calls/minutes/texts/data. Thief may have been after that, instead of a person's phone, that he knows is going to lose service on him in a week when the owner transfers service to a new card/phone.
