Excellent video.
When I was a bouncer and someone got up into my face (inside the 3 feet), I always pushed them back. Its a little different in that situation when your bouncing. If you back off they just get bolder and more confident. Its important not to back down. That would be the one exception to the many good points in your video.

In JKD we trap the persons hand then decide if we want to strike or grapple the opponent to the ground I mostly used trapping and grappling giving me the choice to hurt the opponent and walk away safely
