I'd wait for the thief to get in the bike and grab the throttle with the knife hand, can't wield both at the same time, then clam down on his hand with the knife and throttle and tackle him so the bike is in his leg and you are on the bike, then disarm, and assert control
Question for you John… If the victim in this scenario did Temporary purposeful compliance, but was armed and waiting his turn up, and pulled his gun when the bad guy was about to flee with his bike, would that have been justified?
